Gingerbread

Gingerbread

Preheat oven to 350 degrees

Ingredients

2 1/2 cups sifted all-purpose flour

1 1/2 teaspoons baking soda

1/2 teaspoon salt

1 1/2 teaspoons ground cinnamon

1 teaspoon ground ginger

1/4 teaspoon ground cloves

1/2 cup granulated sugar

1/2 cup unsalted butter, softened

1 large egg, at room temperature

1 cup molasses

1 cup hot water

Confectioners’ sugar for dusting top

Cream together the sugar and butter in a large bowl. Add the egg and beat well. Stir in the molasses with a wooden spoon.

In a medium bowl, sift the flour, baking soda, salt, cinnamon, ginger and clove together. Add the dry ingredients to the sugar mixture. Slowly add hot water and mix well.

Pour the batter into a buttered and floured 9-inch square pan lined with parchment paper. Bake in a 350 degree preheated oven for approximately 25-30 minutes or until a toothpick inserted comes out clean. Cool in pan for 10 minutes and then invert onto a wire rack if you wish. Or you can just cut squares in the pan. Dust with confectioners’ sugar.

Spray some cooking spray in your measuring cup to help the molasses pour easily.
